I was so excited to get back into it…

img_3157.jpgI’ve been living on my own for a while now, and I miss some things about home. My dog…cable TV…hanging out with my parents while not paying rent…oh, yeah, and home cooking.

You might think a salad can’t justifiably be called “cooking,” but I’d have to disagree. This salad isn’t just thrown together…it’s lovingly crafted using carefully chosen ingredients that are fresh, yummy, and healthy.

My mom thought up the specific combination, so I have to give her the credit. And okay, even though this salad isn’t figuratively thrown together, it CAN be literally thrown together, which is a great part of its appeal.

Easiest Dinner EVER: Taco Salad

23039871.jpgThere’s really nothing better I can think of than a dinner that tastes fantastic but took less than 15 minutes to make. Unfortunately, the two are almost mutually exclusive in my mind. I say “almost” because I can think of at least one notable exception: taco salad.

When I was a kid, taco salad was one of my favorite dinners. My mom would sprinkle some grated cheddar cheese on tortilla chips and pop them in the oven to make nachos, and we would eat the nachos as an appetizer while she made the taco salad. When we were done with the nachos, the salad was ready to eat.

I love taco salad so much that sometimes I make the mistake of ordering it when I go out to eat. There’s nothing wrong with that—it’s usually pretty delicious—but then I remember that I can make almost exactly the same thing at home for a fraction of the cost.
