freshman-fc.jpgThe most elaborate meal most college students cook consists of adding water to some noodles and microwaving on high for 2 minutes. Except maybe the weird stuff we all put together after a long night of drinking (Cheez Wiz and frozen spinach? Mmmmm!).

But it doesn’t have to be that way.

Eli and Max Sussman, two lovely boys who are as talented in the kitchen as they are witty, have recently published, Freshman in the Kitchen.

This cookbook is made for us - college students - and teaches everything we need to know about cooking, including making things that don’t require a flavor packet or a microwave.

Go Vegetarian in 5 Minutes or Less

23228909.jpgI’m not a vegetarian, but I like to eat like one. I’m very picky with meats (I don’t eat seafood, beef, or pork); I try to eat healthy (even though I typically consume the calories I cut throughout the week in weekend drinking binges); and, most importantly, I’m a horrible cook, so I’d rather microwave a faux-chicken cutlet than get salmonella from undercooking a juicy piece of pollo.

A recent issue of Shape magazine suggested eating vegetarian once a week, and I was like, “Heyyy I already do that! I rock!” They also featured a mouthwatering recipe for vegetarian paella. That’s not going to happen. So, whether you’re a carnivore or a herbivore, trying to shave some calories from your diet, or too busy to slave over a hot stove, I give you vegetarian meals in five minutes or less. All you need is a microwave.

1. Boca Meatless Chili
You need:
–Boca Meatless Chili, from the freezer section of your grocery store.
–2 slices of whole wheat bread

*Zap the chili for three minutes, stir, and nuke for one more minute.
*While the chili is in the microwave, pop the whole wheat bread in the toaster.
*Cut the whole wheat toast in quarters, top with tasty chili, and enjoy! Read More »

The Microwave: A “Cooks” best friend

Being in college can be tough. You desperately miss your momma’s cooking, warm foods, and a three-meal-a-day regime that doesn’t consist entirely of non-perishables.

That being said, a college dorm or a tiny apartment doesn’t often have the kitchen equipped for culinary excellence. And though I’d like to have an entire spice rack of exotic flavors, different types of olive oils and marinades, I don’t have the money or the room. The solution? My handy dandy microwave.

I’m sure many of you have perfected how to make the perfect eggs, bowl of oatmeal or popcorn with this magical machine, but let me tell you folks, you are beginners if this is all you’ve attempted cooking (”cooking” if obviously a loose term here).
